We offer you two Thanksgiving Turkey options!     

The Green Duchess's mission is to educate the public about the foods available and encourage consumers to make educated decisions when purchasing organic products. In the interest of education, we offer you two types of turkey for your Thanksgiving meal. One you know well, and one you may have never tried. Allowing you to decide which you prefer and feel good about your decision to support local agriculture.

Broad Breasted White

This is the turkey we all grew up with. The Broad Breasted White is the most commonly consumed breed. These birds have been selectively bred for shorter breast bones and larger breasts. Therefore, they produce more breast meat than the Heritage breeds. These characteristics make the breed popular in commercial production. However, many slow food enthusiasts (The Green Duchess included) believe that the development of this breed of turkey for commercial production has come at a cost of less flavor.

We encourage you to try a Bourbon Red turkey, but understand that some traditions don't change easily. 

In order to provide you with the best quality meat for your family's Thanksgiving feast we are offering a limited quantity of pasture-raised, organic Broad Breasted White turkeys.

Your processed turkey will be available for pick-up the week of Thanksgiving. It will be packaged fresh, not frozen like the grocery store.

Bourbon Red

The Heritage breed of turkey we have chosen to raise is the Bourbon Red. 

The breed was first establised in the late 19th century in Pennsylvannia and Kentucky. It was created by crossing  Buff, Standard Bronze, and White Holland Turkeys. It was first recognized as a turkey variety by theAmerican Poultry Association in 1909.

Bourbon Reds were selectively bred for utility traits as a meat bird, and was an important variety in the turkey industry throughout the 1930s and 1940s. Like most turkey breeds, it declined after the commercial adoption of the broad breasted white.

Known as one of the best tasting heritage breeds; these beautiful birds take twice the time to raise than a standard commercial breed.
